Santorini’s Assyrtiko greater nobility and finesse -
along with all those elements that make it unique such
as exuberant mouth, strict structure, acidity, excellent
salinity, a long aftertaste, and great ageing potential with
a special mineral character.
How has your relationship with Santorini and the
winemaking industry evolved over the years?
My relationship with the Santorini vineyard is complex,
deep... I would say metaphysical. I could say that it is a
source of life for me personally.
What does Assyrtiko represent in your view?
Assyrtiko is identified with the unique vineyards of
Santorini. It is a relationship that began when I was young,
Following his father’s footsteps a relationship with all the characteristics of a relationship
in traditional wine-making, Paris based on love, with its good and bad moments, with
Sigalas’ intensive research led him its great joys and great disappointments, but mainly
to create Domaine Sigalas along
with OENO P which produces a a relationship that always leaves an aftertaste of the
limited number of bottles per year. unsatisfied and at the same time a greater attraction
and dependence. •
